No Fat, Low Sugar Ice Cream

I have many tools in my kitchen that might seem extraneous.


The slap chopper, anyone? (Although I do admit to using that one occasionally. It's handy!)

But there is one tool in my kitchen that has become absolutely indispensable. If it broke today, I'd be at the store buying a new one:


My food processor. A while back I saw this (pretty cheap looking) food processor on our credit card rewards site and sent for it with the thought that I might be able to make hummus easier with it. It accomplished that goal, and more. I use it almost every day for a variety of tasks: shredding sweet potato, mashing up beans and rice for veggie burgers, and more. And now it's responsible for this:


No fat, low sugar ice cream. OK, I probably should say "ice cream" because there is no cream involved, but you would not know it to taste this. This one is a game changer.

It comes from Tiffany at TheGraciousPantry.com, and I could not believe how good it was. Three simple ingredients and you've got soft-serve-like ice cream with only natural sugar and no fat? It's TRUE! You must fix this. 

I like to tinker with recipes, so my ice cream had five ingredients, but that's the beauty of this recipe...the possibilities are endless! Use whatever fruit you want, use extracts to flavor it up. Heck, put a little chocolate sauce on it! (But just a little.)

Here's the recipe, and then I'll tell you how I changed it on the other side:

(Makes 8 servings)
Ingredients
2 bananas, sliced and frozen
1/2 cup low-fat cottage cheese
1 cup frozen strawberries (or 1/2 cup fresh fruit or any other addition)

Directions
Step 1 – Place all ingredients in a food processor and blend until smooth. You may have to stop it, remove the lid and poke around at everything a few times to convince the processor to blend it all. And if the mixture seems too dry to process properly, add a small splash or two of non-fat milk to get things loosened up enough to blend. Then start it again. Actually, you may have to do that a few times. But it will blend, I promise.

 I did 1 banana, a few slices of frozen pineapple, a teaspoon of  vanilla extract, plus the strawberries and cottage cheese. My kids LOVED this ice cream, and so did Zach and I. 

If you like treats, this is one where you can't go wrong.
