Kale Chips

It seems like kale is experiencing an upswing in popularity nowadays. It's on everybody's list as the #1 healthy-super-wonder-food, and for good reason. It's the greenest of the greens, the most nutrient-dense food you can pick up at your grocery store. It's chalk full of Vitamin K, Lutein, Vitamin C, and beta-carotene.

If you're not familiar with kale, you've probably seen it at the last banquet you went to as a garnish that holds more popular fruits or vegetables.

 

And I hate to say it, but if you rip off some kale and eat it raw, it tastes tough and sometimes bitter...pretty much how you would expect a plate made of lettuce to taste.

It needs some work, is all I'm saying.

One great way to eat kale is to make it into a chip. Seriously! It's simple.

Just get yourself a bunch of kale, wash it up, and remove the leaves from the stalks.

Then either drizzle the leaves with olive oil, or spray the leaves with olive oil spray. Sprinkle them with kosher salt, then pop them in a 350-degree oven for about 10-15 minutes.

Keep an eye on them while they're cooking. They'll shrivel up to just about nothing, and you want them to get just a tiny bit browned. Not much, though. They ought to look like this:


You wouldn't think that a leaf would turn crispy, but it does. You could eat these as-is, or crumble them and add them to popcorn or a casserole or something.

Another way we use kale is to put it in our Shakeology. The blender pulverizes it and you can't taste it at all!

Get some kale in your diet today! It does a body good.
