Gateway Bean Burgers

I post about bean and veggie burgers all the time, but maybe you've been put off by the long list of ingredients. Or maybe some of the ingredients are strange and you don't have them on hand.

If that's the case, then this is the bean burger for you! Behold, the Quick Burger from Lindsay Nixon's Everyday Happy Herbivore.

Six ingredients, none of them "weird." You can whip these up in 10 minutes with no special tools other than a fork, bowl, and a pan. And if you don't like them? All you're out is a $1 can of beans and a few cents worth of oats.

These black bean burgers can be your gateway to other, more exotic bean burgers!

It's my hope that you try these rather than those frozen jobbies you can get from the store. I've thought about trying those, but every time I pick up the box and see the mile long list of ingredients I think again. Why fill your body with Franken-ingredients when it's just as easy to throw six ingredients in a bowl? It's worth the effort.

I made these last week on our Spring Break camping trip because they are quick, easy, and good. They have a traditional burger taste thanks to the ketchup and mustard. And another bonus? No worry about meat contamination. That's extra nice on a camping trip since you don't have bleach on hand to soak anything the meat may have touched.

Quick Burgers

Ingredients:

  • cup instant oats
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp yellow mustard
  • 2 tbsp ketchup
  • 15 ounces black beans, drained and rinsed

Instructions:

Preheat oven to 400F. Grease a cookie sheet or line with parchment paper and set aside. In a mixing bowl, mash black beans with a fork until mostly pureed but still some half beans and bean parts are left. Stir in condiments and spices until well combined. Then mix in oats. Divide into 4 equal portions and shape into thin patties. Bake for 7 minutes, carefully flip over and bake for another 7 minutes, or until crusty on the outside. Slap into a bun with extra condiments and eat!
